Steve you can pick up cable straps at Radio Shack, Home Depot or any place like that. The holder for the probe is only slightly different than a cable strap. you won't have a problem getting them or being creative enough to mount it. I pretty sure if you called Humminbird they would probably give you the stuff that comes in the original set-up.
