You bet. After filleting them remove the red meat. Put the fillets on a sheet of Foil and used lemon juice butter and wosthershire sause on them. make a tent of the foil and bake for 15 minutes...they are great that way.

Kinda like white bass or big walleye....you can lay your fillets flat with an extra sharp fillet knife ane whittle the "brownish or reddish" meat out....usually on about an 1/8" deep or you can do what they call "zipper" it out. Just go right down along each side and take the strip out...that's the easiest. But if I've only got a couple, I'll whittle it out.

That area is what gives a lot of fish that "strong" taste. You can also do this to catfish:D

 
LOTs of ways we eatem:



1. Always take the red meat off like other say, its WAY too fishy.

2. Chop them up in "finger" sized pieced and beer batter them using a dark Stout as the beer!

3. Full sized filets (or as big as fit in your skillet/pan), spray the pan with a little butter flavored Pam first, then just sprinkle a little bit of Lemon-Pepper sauce and saute'!!

4. Do what RW said, but for a "texican" flair, instead of lemon juice butter and wosthershire use a chunky salsa and bake! MMMMM....
 
Marinade in italian dressing overnight.. wrapped real good in foil, then plastic.

Store them in a Good cooler packed with plenty of dry ice and mail the entire package to ME!!

The best CJ is the BPS Hushpuupie mix. Add green pepper and a little un-yun and wooohwee..it's just plain good. Mix it just a little thicker mix than what they call for and use a spoon to make a ball and drop in your deep fryer for about 3 minutes or until they float are good and brown....MMMMMMMMmmmmmmmmmmm!

Another hint...use beer for your mix:D
