Nice fish. They sure are fun to catch. How do you guys prepare these? I never seem to be able to make these or stripers taste all that good. Every now I hook one that I'm doubtful it will survive, so I let them all go even if gut hooked.
 
Berry - We do it easy down here, skillet and a little lemon pepper sprinkled on it, MMMM!!!
 
Yea didn't get to weigh it till after I got home and then it went 13lbs 10oz,By far the biggest I've ever got!!!
 
When you fillet a striper, wiper or hybrid, just make sure you cut the dark line out of the middle of the fillet. If you like a stronger taste, leave it in. They are just about as good as crappie and white perch. If you want a mild taste, season with lemon and broil, it will cook all of the fish oil out.

When we have a big fry, we'll take stripers (same for hybrids, white bass) and filet them off the skin, then filet them again off the red meat. When the filet is clean from the red meat it is almost snapper quality. Good eating there! :)
 
Wow, nice fish. Berry, do you catch them that big on Old Hickory?
 
On eating these fish the best recipe ive found (over several years)is as follows: Cleanfish removing the dark meat in middle of the fillet and any dark meat near the outside which is close to the skin. . Do not fillet right up against the skin as fish store their fat between the skin and meat( i read this somewhere). After filleting cut meat into strips about 1 inch wide or on smaller fish under two pounds this step is not necessary. Soak the meat overnight in a pan with water ice and salt, be generous with the salt. The next morning remove the fillets and rinse.Get a packet or two of italian dressing follow the directions and marinate the fish strips or fillets in the italian dressing until you are ready to cook that evening. dip fillets in a milk and egg mixture then dredge through cornmeal, deep fry in oil( i usually use peanut or canola oil, your preference.) Invite several of your fishing buddies and/or wives girlfriends etc., pickup a quart of c.royal and some caffiene free diet cokes( caffiene free so they want spend the night). Live the good life!
