Hole shot is the amount of time/distance it takes your boat to go from idle laying low in the water to pad or plane. Each hull is different, some boats look skyward, really drawing down on the stern which is dangerous as you can't see what's in front of you until you're on plane doing at least 30 or 40mph. Others, like the Avalanche "plow" their way out and quickly, allowing you to see the whole time. The jackplate helps in hole shot by placing the motor further back away from the transom, allowing the prop to get in "clean" water away from transom draft or turbulence. It also allows you to slide the motor up and down on the transom for different performance. Hope that helps. WOT means Wide Open Throttle.
