Does anyone know where I can buy that mesh type sleave that covers all the cables and wiring etc from the motor to the splash well? It kinda looks like a rod sock type mesh.
 
Most of that mesh material was originally designed for organizing cables in home / business computer and automotive applications. You can get it in a variety of colors from stores that specialize in electronics. Quick search using the terms "wire sleeve braided" produced these:

All the mesh style that I have used will not stand up very well to the sun. Couple of seasons at most and it just falls apart and makes a heck of a mess:)
 
I went to Joanne's Fabrics, and bought a 5' x 3' piece of marine grade vinyl, in a color compatible with the boat scheme, and 2 packs of stainless snaps. A little hot glue to hold the folds, while you install the snaps. It was easy, and it still looks great. Armour-All once a year.
 
Excellent idea Dyno! I might go one step more and hit up the local store and see if they can stitch me one up with a zipper in it for easy fit and removal.

I got mine from Cable Organizer. I bought 6' so I can replace if needed but so far it's lasted 2 seasons.
